Carrot Cake Waffles and Cream Cheese Topping

Tonight we had Carrot Cake Waffles with a yummy cream cheese topping for dinner....oh yes we did! I love carrot cake and for some reason had it on my brain tonight. Not knowing what to make for dinner a light bulb popped on....Carrot Cake Waffles! I mean why had I not thought of that before?

Well of course I wasn't alone in my brilliant-ness, Annie over at What's Annie Making had already beat me to it. Of course that was lucky for me because I simply needed to follow her easy directions and wonderful photos and all I have to say is YUM this will be a go to from now on!

I modified my recipe just a bit as I didn't have a couple of the ingredients for the waffles but followed her cream cheese topping to a T! I also doubled my recipe to have enough for the four of us.

Carrot Cake Waffles with Cream Cheese Topping Recipe

Ingredients for Waffles
2 cups whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 tsp. ground cinnamon
1/2 tsp. ground ginger
2 eggs
4 tbsp. brown sugar
1/3 cup applesauce
2 cups milk
2 tsp. vanilla extract
3 cups finely chopped/grated carrots
raisins or craisins (optional)

For the Cream Cheese Topping
4 oz. cream cheese
1/4 cup powdered sugar
3 tbsp. milk
1/2 tsp. vanilla

Directions: 

Preheat the waffle iron

Mix together the flour, baking powder, baking soda, salt, cinnamon and ginger in a large bowl.

In a separate bowl mix together the eggs, brown sugar, milk, applesauce and vanilla. Stir in carrots and raisins.

Stir the carrot mixture into the dry ingredients.

Let set while you make the cream cheese topping.

For the Cream Cheese Topping

In a small bowl beat the cream cheese until fluffy. Beat in powdered sugar, milk and vanilla.
This will make a thicker topping. If you want it more runny like a syrup add additional milk.

Cooking
Make sure to lightly spray or coat your waffle iron with a cooking spray or oil. As the waffles are oil free, mine would stick quite a bit even with the spray. I found it best to let these cook a little longer than a normal waffle and they held together better.

Top with your cream cheese topping and oh my gosh goodness! A healthy delicious option for breakfast, lunch or dinner...or dessert!

  2. I made these for dinner last night - my hubby thought it was 'odd' but how can you go wrong with cake for dinner? Deelish!

    1. I'm so glad you tried them! I'm of course with you, cake for dinner...of course you can! We love doing breakfast for dinner and mix it up a bit!
