Chef Kellan's Veggie-Licious Creations Cookbook Review & Giveaway

I absolutely love working with other Mom's! No matter what their story, product or background, it is fun to relate and team up together!

I've been lucky enough to team up and work with Debbie Hammer! A busy Mamma who now has two cookbooks under her belt, a toddler, a job, and a million other titles! She was kind enough to send me her cookbooks for review and one for one of my lucky followers!

About Debbie
Debbie always loved gourmet cooking and food and found that she had a creative energy that came from cooking and a talent for coming up with unique and healthy recipes that actually tasted good. When her son Kellan, (a miracle baby conceived after many miscarriages and years later than planned) was born she couldn't wait until he was ready for solid foods and to introduce him to tasty gourmet foods she didn't discover until she became an adult.

The lack of foods for kids that are good for you and that actually taste good inspired her to start her own toddler and kid friendly recipes and ways to get Kellan to try new foods. And thus her first cookbook was written. Veggie Creations for Kellan: A Collection of Vegetable Recipes for my Toddler. And now out her second revised edition, Chef Kellan's Veggie-Licious Creations.
About Veggie-Licious Creations
I know I get tired of serving the same kid friendly meals, that I know they will eat to my boys. It is always nice to have a little inspiration for new recipes and I love to see actual pictures of the finished product! This cookbook has both. Not to mention cute little pictures of Debbie's son Kellan enjoying her delicious meals.

I also love that this cookbook is sorted out by the primary vegetable ingredient. This makes it very easy to flip to the pages of the veggie you have on hand. Most recipes are ingredients that you would have on hand already and are simple to make.

We found numerous recipes that we loved to make or gave us inspiration for new ideas. I love too that the boys are getting their veggies with little to no fuss! Big Brother also likes to help me cook and bake so this was a fun review project for us.

I won't spoil the cookbook and give away too many recipe ideas. But a few of our favorites include:
• Plain Pasta
• Choo Choo Train Bars
• Cheese Moons

And our sneak peak recipe I will share with you of Carrot Crackers! This batch of crackers lasted about 30 minutes tops! These are so good and easy to make, they will definitely be a new staple around our house. The boys gobbled them up so fast, and ok I did too!

Carrot Cracker Recipe - Courtesy of Chef Kellan's Veggie-Licious Creations 

Ingredients:
• 1 cup grated sharp cheddar cheese
• 1/4 cup butter, softened
• 1/2 cup peeled, grated carrot
• 1/2 tbsp extra virgin olive oil
• Dash salt
• Dash Cayenne
• 1/2 cup plus 2 tbsp flour

Directions:
Beat cheese, butter and carrots in food mixer. Add remaining ingredients. Shape mixture into a 2x7 log. Wrap in plastic wrap and refrigerated for 1 hour. Remove wrap. Preheat oven to 350 degrees. Cut into 1/4 inch slices. Lay on baking sheet. Bake for 13-17 minutes, until crisp and light brown. Makes 24 crackers.



The only thing I did differently was I used a cheddar blend cheese and I didn't have any cayenne so I added garlic to mine. So easy and so delish!
